Grilled (BBQ) Honey Garlic Chicken Skewers

Here’s a fun and easy Grilled Honey Garlic Chicken Skewers recipe that you and the kids can make together!



Ingredients

2 boneless, skinless chicken breasts (or thighs)

  • 1 bell pepper (any colour), chopped
  • 1 small courgette, sliced
  • ½ red onion, chopped
  • 8-10 cherry tomatoes (optional)
  • Wooden skewers (soaked in water for 30 minutes)


Marinade:

  • ¼ cup honey
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp garlic powder (or 2 minced garlic cloves)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional, for extra flavour)

Instructions:

  1. Prep the Chicken – Cut the chicken into bite-sized chunks. (Grown-up task!)
  2. Make the Marinade – In a bowl, mix honey, soy sauce, olive oil, garlic, salt, pepper, and paprika.
  3. Marinate – Let the kids help mix the chicken into the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours).
  4. Assemble Skewers – Kids can help thread the marinated chicken, bell peppers, zucchini, onion, and cherry tomatoes onto the skewers.
  5. Grill – Preheat the grill (BBQ) to medium-high heat. An adult can grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temp (75°C).
  6. Serve – Enjoy with rice, a salad, or some garlic bread!
